CFRF Scup Mince Processing Research Assistant

Project Description

In partnership with renowned food scientist and University of Rhode Island emeritus professor Dr. Chong Lee, Quonnie Fish Co., and Eating with the Ecosystem, CFRF is exploring scup mince processing utilizing medium-sized scup. This project will build on previous work to refine scup mince production and optimize the stability of frozen scup mince over time. We will work with local restaurant and seafood businesses to develop value-added products from the scup mince to increase the marketability of scup and to help promote this local, sustainable resource. Job Duties and Experiences

  • Assist with processing scup into mince using a Baader deboning machine and quantifying production yield

  • Assist with laboratory prep and analyses including, but not limited to, approximate composition (e.g. lipid, protein, and moisture content)

  • Assist with frozen mince stability formulation and quality assessment

  • Assist with textural and sensory evaluation of scup mince

  • Opportunities to help develop scup mince recipes for value-added products

  • Opportunities to work closely with local fishermen

  • Assist with project summaries, reports, and outreach

Timeframe and Compensation:

This part-time position is offered from June through August 2026 with potential for an extension in the Fall semester. Work hours will be about 10 hours per week for 12 weeks with compensation up to $20/hour. Hours per week and schedule will vary depending on the timing of processing trials and laboratory analyses. This position is supported by the Seafood Industry Research Fund.

Eligibility: 

This internship is open to undergraduate and graduate students in food science or a related field. Applicant must have lab work experience. The selected applicant must have reliable transportation to southern Rhode Island for in-person lab work, meetings, and project activities.
